The vines of Saint Louis grow on the Tarn (river) terraces. The soil composition is typical from the Fronton region: sandy boulbene, gravely, clayey, and lightly acid.
This location, next to the Tarn River, provides a temperate climate which is favorable to a good vine grow.
The vines are entirely taken care with organic agriculture methods only. Theofficial organism, ECOCERT, controls all those operations.
By applying the official European rules of organic agriculture, we develop the biodiversity by optimizing the balance of nature in the vines.
Oat and horse bean growing between the vines is a natural way to bring nitrogen from the air into the ground, and at the same time, it keepsweeds from proliferating.
Between the vines, the weeds are removed mechanically. In doing so, we never use any herbicide. The only fungicide we are allowed to use is a mixture of copper sulfate and sulfur,and it is always used at a minimum dose. None of those components will actually penetrate the vine. Thus,our wines are free from any trace of chemical product.
In order to reach a complete ripeness of the grapes, leaf-thinning andbud removal are performed each year. Those methods help us to produce better quality grapes.
FOR OUR RED WINES
The � Pinot Saint Georges �, also called Négrette, is the varietal of the Fronton area, and also the main varietal of Saint Louis.
The Negrette is our principal varietal. All our red wine contain at least 70% of Negrette. The Cabernet Franc is our second most used varietal, and finally we also use a touch a Syrah.
FOR OUR WHITE WINES
At Château Saint Louis, we were the first ones in the department to grow some Chardonnay. This famous varietal from Burgundy has greatly adapted to the domain�s microclimate.With the Chardonnay, we produce a remarkable white wine,
as well as a sparkling wine, called �Pr�t en Bulles�, which amaze all our customers.
All our wines are produced, matured, and bottled at the Château .
The winemaking is realized into enameled thermo regulated traditional vats.
The thermo regulation allows the winemaking to happen with ideal temperatures to successfully extract colors and tannins from the grapes in order to improve aroma and taste of our wines.
We do not use any allergen product during winemaking. The grapes are never enriched with any sugar or must.

We use 140 oak barrels for the maturation of the wines.
Maturing of our red wines lasts for 12 months in oak barrels.
Maturing of the Chardonnay is also partially done in oak barrels.
