L’Extrême

This unique wine is produced only on exceptional vintage occasions. The cuvée is made with a blend of 50% Négrette and 50% Cabernet Franc. This wine for laying down is characterized by its finesse, elegance and minerality. The grapes, meticulously harvested by hand, come from the estate’s oldest plots dating respectively from 1965 for the Négrette and 1977 for the Cabernet Franc. After destemming, the grapes are foulés and encuvés with very little sulfite but enough levain naturel to bring the fermentation to completion without deviation. Vinification lasts around 3 weeks, and after several soutirages, the wine is aged in barriques for 12 to 14 months.
